PUMPKIN - Roasted Sugar Pumpkin with Garlic and Shallots

Ingredients

  • 2 1/2 lb. sugar pumpkin, seeded and cut into 3/4" - 1" cubes
  • 4 - 6 shallots, quartered or halved
  • 6 - 10 cloves garlic, peeled and halved
  • 3 tablespoons EVOO
  • 1 sprig rosemary
  • pinch each freshly grated nutmeg and ground cinnamon
  • Maldon salt and freshly ground black pepper to taste

Preparation

Step 1

Preheat oven to 450.

Toss everything together in a large bowl and lay out on a parchment-lined baking sheet.

Roast until pumpkin is tender, 30 to 35 minutes, tossing once.
