STRAWBERRY MUFFINS

Ingredients

  • 2 cups all purpose flour + 2 teaspoons for tossing with strawberries
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 stick of butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1-1/2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup milk
  • 2-1/4 cups diced strawberries
  • 2 tablespoons turbinado sugar, for topping

Preparation

Step 1

Preheat the oven to 375F. Spray muffin tins with cooking spray.

In a medium bowl, whisk together the flour, baking powder and salt.

Beat the butter and sugar. Add the eggs one at a time. Beat in the vanilla extract and almond extract.

Add the flour mixture alternating with milk.

Toss the strawberries with 2 teaspoons flour. Set 1/2 cup of the strawberries aside. Add the berries to the batter and fold with spatula. Don't overtax. Scoop the batter into prepared muffin tin. Scatter the remaining berries on top then sprinkle with turbinado sugar.

Bake for about 30 minutes, until lightly golden and a cake tester comes out clean.
