Red Velvet Cup Cakes

Ingredients

  • 2 sticks butter softened
  • 4 eggs
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 1/2 teaspoon vanilla
  • 2 tablespoons red food coloring
  • 2 1/2 cups flour
  • 1/3 cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • FROSTING
  • 8 oz cream cheese
  • 1/2 stick butter softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

Preparation

Step 1

Heat oven to 350*
place paper liners in 24 muffin cups
set aside
cream butter and sugar then add the eggs 1 at a time
beating well after each addition
mix in sour cream, milk, vanilla and red food coloring
combine flour, cocoa, baking soda, and salt
add flour mixture to egg mixture slowly until well blended
spoon batter into 24 paper-lined muffin cups
bake 20 minutes cool
FROSTING
beat cream cheese, butter, vanilla and powdered sugar until fluffy
frost the cooled cupcake
