Ingredients
- 1 stick (1/2 cup) butter, cut up
- 1 tbsp lemon juice
- 1 tbsp tarragon vinegar (or white wine vinegar)
- 1 tbsp minced fresh chives
- 1/4 tsp salt
- 1/2 tsp dried tarragon
- 2 XL egg yolks
- pinch pepper or cayenne
Preparation
Step 1
Combine all ingredients in a saucepan. Place over low heat. Whisk until the butter melts, then whisk constantly until thickened. Immediately remove from heat otherwise it will break down. Whisk again.
