Mustard Glazed Chicken Breasts

Ingredients

  • 4 boneless chicken breast, skin on
  • 2 Tbs olive oil, plus more for breasts
  • Salt and Pepper
  • 4 Tbs unsalted butter, softened
  • 2 1/2 Tbs Dijon mustard
  • 3/4 cup coarse breadcrumbs
  • 2 Tbs chopped fresh thyme,plus more for garnish
  • 3/4 canned chicken stock
  • 1/2 cup heavy cream

Preparation

Step 1

Preheat oven to 375.
1. Rub chicken breasts lightly with olive oil,s/p.
2. Combine 2 Tbs butter with the mustard.
3. Melt remaining 2 Tbs butter; mix with breadcrumbs and thyme,s/p.
4. In a large skillet, heat olive oil. Sear chicken skin side down until crispy, about 5 min. Remove from heat.
5. Smear chicken with mustard mixture and sprinkle with breadcrumbs. Turn skinside up and apply mustard mixture and breadcrumbs.
6. Transfer skillet to oven and roast till cooked and top is golden brown, about 15 to 20 min.
7. Transfer chicken to serving platter.
8. Add stock and cream to skillet over med. heat. Stir until creamy and reduced to 3/4 cup.
9. Remove from heat and stir in reserved mustard mixture.
10. Pour over chicken and garnish with thyme.
