Ingredients

  • 4 cups thinly sliced unpeeled zucchini
  • 1 cup coarsely chopped onions
  • 1/2 cup butter
  • 1/2 cup chopped parsley
  • s/p
  • 1/4 tp garlic powder
  • 1/4 tp sweet basil leaves
  • 1/4 tp oregano leaves
  • 2 eggs, well beaten
  • 8 ozs (2 cups) shredded muenster or mozzarela cheese
  • 1 8 0z can refrig,crescent dinner rolls
  • 2 tp dijon mustard

Preparation

Step 1

Heat oven to 375 F.

1. In 10 inch skillet, cook zucchini and onions in butter until tender, about 10 min.
2. Stir in parsley and seasonings.
3. In a large bowl, blend eggs and cheese. Stir in vegetable mixture.
4. Separate dough into eight triangles and place in ungreased 10 inch pie pan. Press over bottom and up sides to form crust.
5. Spread crust with mustard.
6. Pour vegetable mixture evenly onto crust.
7. Bake 18 to 20 min. or until knife comes out clean. If crust becomes too brown, cover with foil.
8. Let stand 10 min, before serving.

Cut into wedges and serve hot.
