Ingredients
- 4 C unsifted all purpose flour
- 2 C quick, old fashioned oats
- 2 tsp baking soda
- 2 1/2 tsp cinnamon
- 1 tsp salt
- 1 1/2 C butter, room teperature
- 2 C brown sugar, packed
- 1 C granulated sugar
- 1 egg, room temperature
- 1 tsp vanilla
- 1 can pumpkin, Libby solid packed (16 oz)
- 1 C chocolate morsels and or raisins and or walnuts (optional)
Preparation
Step 1
Preheat oven to 350 degrees
Combine flour, oats, soda, cinnamon and salt, set aside.
In a mixing bowl, cream butter, gradually add sugars beating until light and fluffy.
Add egg and vanilla, mix well.
Alternately add dry ingredients and pumpkin, mix to incorporate after each addition.
Stir in morsels/raisins/nuts (if used), blend in well.
Drop by 1/4 Cupful onto lightly greased cookie sheet.
Bake 20 to 25 minutes until cookies are firm and lightly browned.
Remove from cookie sheet to cool on wire rack.
Cookies can be frosted if desired with cream cheese frosting, a glaze or peanut butter.
