Rhubarb Dream Bars

  • CRUST:
  • 2 C. flour
  • 1 C. butter
  • 3/4 C. powdered sugar
  • FILLING:
  • 4 eggs
  • 2 C. sugar
  • 1/2 C. flour
  • 1/2 tsp. salt
  • 4 C. rhubarb, diced

Preparation

Step 1

Crust: Mix ingredients like a crumble, then pat into 10x15” pan. Bake for 15min at 350 degrees F.
Filling: Combine eggs, sugar, flour, and salt; mix well. Fold in the rhubarb.
Pour filling over crust and bake 40-45 min, or until top is lightly golden.
