Ingredients
- 2 to 4 chops
- 1/4 cup soy sauce
- 3 tablespoons lime juice
- 2 tablespoons sugar
- 1 tablespoon canola oil
- 1 tablespoon cider vinegar
- 2 to 3 teaspoons fresh ginger (I used ground)
- 1/4 teaspoon crushed red pepper (optional)
Preparation
Step 1
1. Place chops flat in a baking dish. In a small bowl whisk together soy sauce, lime juice, sugar, oil, vinegar, ginger, and red pepper. Spoon two tablespoons of the mixture over chops. Turn to coat. Cover. Let stand 20 minutes or more at room temperature, turning occasionally.
2. In a small saucepan bring remaining soy mixture to boiling. Boil gently 1 to 2 minutes or until reduced to about 1/4 cup; set aside.
3. Place chops on a grill rack and grill covered, for three minutes per side or until chops are slightly pink in the center, turning once.
4. Just before serving, drizzle with remaining boiled soy sauce mixture.
