  • 2 Tb oil
  • 3 pound beef roast
  • 1 onion, sliced
  • 4 garlic cloves
  • 4 thye sprigs
  • 1 bay leaf
  • 1 3/4 c beef broth
  • 1 pound small new potatoes
  • 4 - 5 large carrots cut up
  • parsnips

Preparation

Step 1

SAUTE high....Season roast, and brown on all sides (3 - 4 min each side)
Transfer meat to plate. Add onion and cook 3 - 5 min, add garlic, thyme bay leaf and broth. Return meat and secure lid.
MANUAL and cook high for 1 hour.
QUICK release. Add potatoes, carrots, parsnips submerging them in liquid
MANUAL and cook at high heat for 10 min.
Use natural release for 10 min.
