Ingredients
- 1 15oz.can pumpkin puree
- 4 large eggs
- 1/2 c. maple syrup (the real stuff)
- 1 Tbsp + 1 tsp. pumpkin pie spice
- 1-1/2 tsp vanilla extract
- 1 c. fine almond flour
- 2/3 c. + 1 Tbsp. coconut flour
- 1 tsp. baking soda
- 3/4 tsp. sea salt
- 1/4 c. coconut oil, melted
- 3/4 c. macadamia nuts, chopped
- 10 oz. white chocolate chips (optional)
Preparation
Step 1
Pre-heat oven to 375• F an line a baking sheet with parchment paper
In a large bowl combine pumpkin puree, eggs, maple syrup, pumpkin pie spice and vanilla extract; blend until smooth
In a medium bowl stir together almond flour, coconut flour, baking soda and salt
Slowly add the flour mixture to the pumpkin mixture, blending until smooth
Once ingredients are well combined, add melted coconut oil and mix well
Add macadamia nuts and white chocolate chips at this point
Drop onto cookie sheet and bake for 20-25 minutes or until golden brown
