Fatayer (Lebanese Spinach Pies)

Ingredients

  • Dough:
  • 8 cups all-purpose flour
  • 1/2 cup oil, usually vegetable or canola
  • 1 packet quick-rise or cake yeast
  • 1 Tbsp salt
  • approximately 3 cups lukewarm water
  • Spinach Filling:
  • 2 bunches of fresh spinach or 20 oz. chopped, frozen spinach, defrosted
  • 1/8 tsp allspice
  • 1/4 cup olive oil
  • 3/4 cup lemon juice
  • Salt and pepper, to taste

Preparation

Step 1

1. In a large mixing bowl, combine the yeast with the water, oil and salt. Mix until yeast is dissolved. Mix in the flour until dough forms. Knead the dough, adding flour, if necessary, to form a smooth dough. Cover tightly and let rise in a warm place for at least 1 hour. Punch down, then shape into large balls. Cover and let rise for 20 minutes
2. Make the filling: wash fresh spinach and drain well. Add salt and rub the fresh spinach well, with the salt. Squeeze out ALL excess liquid. Finely chop the spinach. Add the seasonings and work with fingers, mixing well. Add oil and lemon juice and mix well.

Preheat oven to 450 degrees F

3. Roll out the dough to the thickness of pie crust. Cut into 4 inch rounds. Spoon filling into center of the round. Fold dough over to form a triangle, pinching the edges, to seal. Place on greased baking sheets. Bake at 450 degrees until the bottoms are brown, about 12-15 minutes. Place under the broiler to brown the tops lightly.
