Mushroom Pasta

Ingredients

  • 10 oz cremini mushrooms, sliced
  • 10 oz shiitake mushrooms, sliced
  • 3 shallots, finely minced
  • 2 cloves garlic, finely minced
  • 1 1/4 C chicken broth
  • 1 C half & half (or cream)
  • 1 C fresh grated parmesan
  • short pasta (like bow tie or rotini)
  • 2 Tbsp butter
  • 2 Tbsp olive oil

Preparation

Step 1

Saute shallots and garlic in 2 Tbsp butter and 2 Tbsp olive oil. Add the mushrooms and sauce until they begin to wilt. Add broth and simmer.

While mushrooms are simmering, cook pasta according to package directions. By the time the pasta is cooked, the mushroom mixture should have cooked down some. Remove the mushroom mixture from the heat and stir in the cream. Drain the pasta and put it back in the pan you cooked it in. Add mushroom mixture and parmesan and stir to mix everything.
