Crispy Baked Avocado with Sriracha Mayo

Ingredients

  • Sriracha Mayo:
  • 1 cup Panko Breadcrumbs
  • 1 tsp Paprika
  • 1 tsp Sea Salt
  • 1/2 tsp Pepper
  • 2 lrg Avocados, each peeled and cut into 8 wedges
  • 1 Tbsp Lime Juice
  • 3/4 cup Flour
  • 1 Egg, beaten
  • Cooking spray
  • 1/2 cup Mayo
  • 1-2 Tbsp Sriracha

Preparation

Step 1

Preheat oven to 400.
Mix together the panko, paprika salt and papper. Place the flour and beaten egg in additional bowls or shallow dishes.
Squeeze the lime over the avocado (and sprinkle with salt). Working with one wedge at a time, dredge each slice of avocado in flour, dip in egg and coat well with the panko miture, pressing down to make sure it covers the entire wedge.

Place on the prepared baking sheet, spray generously with cooking spray and bake @ 400 for 15 minutes or until golden brown.

Freezes very well raw, and bakes nicely while still frozen.
