Ingredients
- 1 tbsp olive oil
- 1 shallot, diced
- 1/2 clove garlic, minced
- 2 cups good-quality plain tomato sauce
- 2 cups sodium-reduced vegetable or chicken broth
- 1/4 cup tomato paste
- 1/2 cup whipping cream
- 1/2 tsp sugar
- 1/4 tsp each salt and pepper
- 1 tbsp each chopped fresh basil and fresh tarragon
Preparation
Step 1
In sauce, heat oil over medium heat; cook shallot, stirring occasionally, until softened, about 5 minutes. Add garlic; cook, stirring, until fragrant, about 1 minute. Stir in tomato sauce, broth and tomato paste. Bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened, about 15 minutes. Stir in cream, sugar, salt and pepper. Sprinkle with basil and tarragon.
