  • 1 lb ground beef
  • 1/2 cup green pepper, diced and divided
  • 1/2 cup red pepoer, diced and divided
  • 1/2 cup corn
  • 1 packet taco seasoning
  • 1 can condensed tomato soup
  • 3 ounce cream cheese
  • 1/2 cup diced and divided
  • 2 cups mexican style cheese, shredded and divided
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 30 0unce shredded hashbrown potatoes, thawed

Preheat 350 degrees. Prepare a 2-1/2 casserole dish.

In a saucepan cook ground beef, half the peppers, and half the onion, until brown.

Add tomato soup, corn, and cream cheese, stirring until well blended. Add taco seasoning and 1 cup cheese, then transfer evenly to prepared pan.

In a mixing bowl, mix potatoes, remainder green peppers and onions, salt, pepper.
and remainder of cheese. Transfer evenly over top of ground beef mixture. Bake 30-35 minutes until golden brown.
