Apricot Glazed Tenderloin
- 1 pork tenderloin ( about 1 1/2 pounds)
- 1/4 cup apricot preserves
- 1 tbsp cider vinegar or apricot brandy
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp hot pepper sauce
Trim any excess fat from meat. In small bowl, stir together remaining ingredients. Place meat on grid over medium coals; cover and grill turning occasionally until meat reaches an internal temperature of 155 degrees, about 30 minutes. Baste with apricot sauce during the last 15 minutes of cooking time.
