Ingredients
- 1 1/2 cups chopped tomatoes - I used cherry tomatoes
- 1 cucumber, peeled and diced - I used an English cucumber
- 1 avocado, diced
- 4 ounces feta cheese, cubed - I didn't add this for Rosh Hashanah
- 2 tablespoons minced red onion
- 1 handful of parsley, minced, about 2 tablespoons
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Preparation
Step 1
Combine first 6 ingredients.
Whisk together olive oil, red wine vinegar, salt and pepper.
Toss with ingredients. Serve immediately.
(If not serving immediately, don't add avocado until you're ready to serve.
