Ingredients
- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 2 cups half and half
- 1 cup irish stout beer, at room temp
- 10 oz irish cheddar cheese, shredded (about 2 1/2 cups)
- 1/2 tsp worcestershire sauce
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tsp finely chopped fresh chives
Preparation
Step 1
melt butter in a large saucepan over medium heat. add flour and cook, whisking constantly, until very smooth, about 5mins. slowly add the half and half,and cook, whisking often, until mixture begins to bubble and thicken, about 10mins. add beer to the saucepan, and cook, stirring constantly, 1mins. reduce heat to low. add cheese and worcestershire sauce, and cook, stirring constantly, until cheese is melted. add salt and pepper and remove from heat. sprinkle with chopped chives. serve hot with toasted bread cubes and crudites for dipping.
