Ingredients
- 3 cups cooked chicken
- 1 small onion, diced
- 1 small green pepper, diced (optional)
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 pound grated cheddar cheese
- 1 tsp chili powder
- 1 can Ro-tel tomatoes
- 10-12 corn tortillas (can be softened in chicken broth)
Preparation
Step 1
Preheat oven to 350 degrees. Mix all ingredients except cheese and tortillas. Layer a large, flat, greased casserole with small pieces of tortillas. Make a layer of chicken and half of other ingredients, then cheese. Repeat starting with tortillas. Top with remaining cheese. Bake 1 hour until bubbly.
