White Chicken Chili

Ingredients

  • 2 t. canola oil
  • 1 medium onion, diced
  • 1 t. minced garlic
  • 1 1/2 t. cumin
  • 3/4 t. basil
  • 1/8 t. cayenne pepper
  • 1 (14 oz.) can or 2 cups chicken broth
  • 1 (14 oz.) can chopped green chilies
  • 2 (15 oz.) cans Great Northern beans, drained
  • 3 cups shredded skinless chicken breast
  • 1/3 cup fresh chopped cilantro, for garnish
  • 1 cup reduced fat Mexican blend shredded cheese

Preparation

Step 1

Heat oil over medium heat in large pan. Add onion and saute for 4-5 minutes or until slightly softened. Add garlic, cumin, basil and cayenne pepper; aute for 1 minute. Stir in the chicken broth, green chilies, beans and chicken. Reduce heat to low and simmer for 15 minutes. Ladle into bowls and top with cilantro and cheese.
