Ingredients

  • 1/4 cup powdered sugar
  • 3 T. unsalted butter, softened
  • 1/2 cup flour
  • 3 eggs
  • 3/4 cup sugar or Splenda
  • 2 t. lemon zest
  • 1/3 cup lemon juice
  • 3 T. flour
  • 1/2 t. baking powder
  • 1/8 t. salt
  • Powdered sugar for dusting

Step 1

Preheat oven to 350 degrees. Beat powdered sugar and butter on medium speed until creamy. Gradually add 1/2 cup flour and mix on low until mixture is crumbly. Press mixture into bottom of 8" pan. Bake until golden brown, 10-12 minutes. Cool on rack.

Lower the oven to temperature to 325 degrees. Whisk eggs until foamy. Add the sugar, lemon zest, lemon juice, 3 T. flor, baking powder and salt; combine. Pour the mixture over the baked crust and bake until set, about 20-25 minutes.

Dust with powdered sugar. Cut into 8 squares.
