Baked Green Bean Fries

Ingredients

  • 1 cup Panko
  • 1/2 c. grated Parmesan cheese
  • Pinch of cayenne pepper
  • salt & freshly ground pepper, to taste
  • 1 1/2 pounds green beans, trimmed
  • 1/2 c. all-purpose flour
  • 2 large eggs, beaten

Preparation

Step 1

1. Preheat oven to 425 degrees F. Ligtly oil a baking sheet or coat with nonstick spray.

2. In a large bowl, combine Panko, Parmesan and cayenne pepper, season with salt and pepper, to taste. Set aside.

3. Working in batches, dredge green beans in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.

4. Place green beans in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp. Serve immediately
