Ingredients

  • CAKE
  • 3/4 cup unsalted butter softened
  • 1 1/2 cups sugar
  • 3 large eggs at room temperature
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup buttermilk room temperature
  • 1 1/2 teaspoon vanilla
  • CARAMEL GLAZE
  • 3/4 cup brown sugar
  • 1 1/2 cups heavy cream
  • 1 1/2 tablespoons unsalted butter
  • a pinch of salt

Preparation

Step 1

CAKE
butter cake pans or spray with no stick
beat the butter and sugar in a large mixing bowl with an electric mixer for 5 minutes at medium speed until light and fluffy
beat in eggs one at a time
scrape the bowl and beaters well to incorporate
sift the flour with the baking powder and baking soda
add a quarter of the flour mixture to the butter-egg mixture,
then add vanilla and a third of the buttermilk repeat beginning and ending with the flour mixture and scraping well after each addition
pour the batter into the prepared pans and spread to edges with a spatula
bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean
cool in pans on a rack for 5 minutes
turn pans onto the rack
remove parchment paper and cool completed before frosting
FROSTING
Place glaze ingredients in a medium saucepan over medium heat
stir with a wooden spoon ad bring to a simmer, the reduce heat slightly
simmer for 7 minutes stirring frequently, until glaze is thickened
cool until barely warm
Pour the glaze over the top of the cake and spread to edges with a spatula
