Almost Buttermilk Pancakes

How to make buttermilk pancakes without buttermilk. Only 2 WW points per pancake! This recipe made 12 pancakes - I use my 1/4 cup measure per pancake.

Ingredients

  • 2 cups white flour
  • 1 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups 2% milk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup plain greek yogurt
  • 2 large eggs, slightly beaten

Preparation

Step 1

Mix dry ingredients together. Make a well in the middle and add remaining ingredients. Stir until just combined – the batter will be a bit lumpy, don’t worry. Now the most important part – you have to let the batter sit at least 15 minutes. This will ensure fluffy pancakes every time.

Cook about 1-2 minutes per side. Serve with sugar free pancake syrup.
