Strawberry Basalmic Vinagarette

  • 1/2 c. sliced strawberries
  • 1 tsp. mustard
  • 2 Tbsp red wine or balsamic vinegar (check carb counts)
  • salt and pepper to taste
  • sweetener to taste (optional, depends on sweetness of berries)
  • 1/2 c. olive oil



Step 1

Puree strawberries in a blender or food processor. Add remaining ingredients except olive oil and blend. Add the olive oil and blend until creamy. Taste and adjust seasonings, if necessary.

Makes 8 servings of about 2 Tbsp. each

Each serving has 1/2 gram of effective carbohydrates and approx. 123 calories
