Spinach Stuffed Fish Fillets

Ingredients

  • cooking spray
  • 1 teaspoon olive oil
  • 1/2 pound sliced mushrooms
  • 1/2 pound fresh spinach, chopped
  • 1 small can water chestnuts, chopped
  • dash of garlic powder
  • dash of dried oregano
  • 24 ounces of fish
  • 2 tablespoons sherry
  • 1 cup grated mozzarella cheese

Step 1

Preheat oven to 400F. Spray baking dish with cooking spray. Heat oil in a skillet and sauté mushrooms for about 3 minutes or until tender. Add spinach and cook 1 minute longer or until spinach is barely wilted. Remove from heat. Drain liquid into baking dish. Add oregano and garlic to vegetables and stir. Divide vegetables, centered, over fish. Roll fillet around vegetables and place seam-side down in baking dish. Sprinkle with sherry and top with grated cheese. Bake for 15-20 minutes or until fish flakes easily with a fork. Remove fish fillets from baking dish with a slotted spoon.
