Chicken Taquitos

A great way to use up leftover chicken, and a quick weeknight dinner. All three turn out to be 11 WW points!

Ingredients

  • 3 corn tortillas (3 pts.)
  • 3 ounces chicken (3 pts.)
  • 3 tablespoons fat free refried beans (1 pt.)
  • 3/4 ounce cheddar cheese (2 pts.)
  • 1 tsp. oil for frying (1 pt.)
  • 1.5 tablespoons light sour cream (1 pt.)
  • chopped baby spinach and jalapeno (0 pt.)
  • 1 tablespoon salsa (0 pt.)

Preparation

Step 1

Heat the corn tortillas in the microwave for 20-30 seconds, until they are pliable.

Build each taquito:

1 ounce chicken, 1 tablespoon fat free refried beans, sprinkle of cheese, 1 tablespoon of salsa.

Roll up and deep fry for 2-3 minutes. Since my deep fryer holds a perfect temperature, my food is crisp, not greasy - so I add 1 teaspoon of oil absorption for the 3 taquitos.

Serve with salsa, sour cream and cilantro.
