Veggie Chopped Salad

Ingredients

  • 3 c finely chopped fresh broccoli
  • 3 c finely chopped cauliflower
  • 3 c finely chopped celery
  • 2 c frozen peas (about 8 oz), thawed
  • 6 bacon strips, cooked and crumbled
  • 1-1/3 c mayonnaise
  • 1/4 c sugar
  • 2 Tbsp grated Parmesan cheese
  • 1 Tbsp cider vinegar
  • 1/4 tsp salt
  • 3/4 c salted peanuts

Preparation

Step 1

In a large bowl, combine the first five ingredients.

In a small bowl, mix mayonnaise, sugar, cheese, vinegar and salt until blended.

Add to salad and toss to coat.

Stir in peanuts just before serving.

Refrigerate leftovers.

Serving size - 3/4 c, 12 carbs.
