Porcupine Meatballs

Ingredients

  • 1 pound ground beef
  • 1/2 cup raw rice
  • 1 tsp salt
  • 1/8 tsp pepper
  • 2 cups tomato juice
  • 1/2 medium onion, chopped or sliced

Preparation

Step 1

Mix ground beef, rice, salt, and pepper. Form into small balls. Put in casserole dish. In a small skillet, melt 1 TBSP butter and sauce onion. Add tomato juice. Pour over meatballs, cover with foil and bake at 350 degrees for 1 hour 15 minutes.

*I just slice onion and put on top of meatballs, then pour juice over, cover and bake.
