Chef Jim's Classic Meatloaf

This recipe is based on 2 lbs of meat ... recipe can be multiplied. I like to use equal amounts of medium ground beef, pork, and veal.

Ingredients
- 1 rib of celery
- 1 carrot
- 1 onion
- 3 cloves garlic
- 1 large can diced tomatoes, well drained
- 1 packet Knorr Onion Soup Mix
- 2 eggs
- 2 lbs. medium ground beef (or combination of beef, pork, and veal)
- 3 mild or spicy Italian sausages, removed from casings
- 1-1/2 t Dijon mustard
- 1/2 cup ketchup
- 2 T Worcestershire Sauce
- 1/3 cup parsley
- 1 t Italian herbs
- 1 cup breadcrumbs
Preparation
Step 1
Combine onion, carrot, and garlic in a food processor and process until almost pureed.
Combine remaining ingredients and mix gently ... do not over-handle the mixture.
Shape into a round meatloaf that looks like a large hamburger.
Sear the meatloaf on both sides.
Place the meatloaf in a pot or roasting pan. Add beef broth to half way up the meatloaf. Roast/Simmer until meatloaf is done, approximately 1 hour. Allow to rest in liquid for 10 minutes before serving.
