Ingredients
- 5 1/2 LBS turkey wings
- Neck, heart & gizzard reserved from turkey
- 12 C low-salt chicken broth
- 3 LG carrots, cut into chunks
- 3 LG celery stalks, chopped
- 2 med onions, quartered
- 2 med leeks (including dark green part), split lengthwise, rinsed, chopped
- stems from 2 bunches parsley
- 6 LG fresh thyme sprigs
- 3 Turkish bay leaves
Preparation
Step 1
place turkey wings & neck, heart, & gizzard in lg. pot.
add all remaining ingredients
bring to boil
reduce heat to med-low
simmer gently until gizzard is tender, 1-1/2 - 2 hrs
using tongs, transfer neck, heart & gizzard to plate, reserve
discard wings
strain stock & spoon off fat from surface
measure stock & if necessary, boil until reduced to 8-1/2-9 C

can be made 3 days ahead
cool 1 hr
chill uncovered until cold
cover & keep chilled
wrap & chill turkey neck, heart & gizzard separately for making gravy
