Cajun Sausage and Rice Skillet

Ingredients

  • 1 pkg (16 oz) hot breakfast sausage
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 1 can (14.5 oz) diced tomatoes with garlic and onion, undrained
  • 1 can (14. oz) chicken broth
  • 3 tsp Cajun seasoning
  • 1/4 tsp pepper
  • 2 bags boil in a bag white rice

Preparation

Step 1

In a large nonstick skillet, cook and crumble the sausage with onion and pepper over medium-high heat until no longer pink.

Stir in the diced tomatoes, chicken broth, Cajun seasoning, pepper and contents of rice bags; bring to a boil. Reduce heat; simmer covered until liquid is absorbed and rice is tender. About 8-10 minutes.
