Ingredients

  • 1 tbsp. olive oil
  • 1/3 cup thinly sliced red onion
  • 8 oz. fresh strawberries, quartered
  • 1/2 cup pinot grigio or similar white wine
  • 1/4 cup honey
  • 1 tsp. Sriracha chili sauce
  • 1 (14-oz.) Camembert or
  • Brie cheese round
  • 2 tsp. finely chopped fresh chives
  • 1/8 tsp. sea salt
  • 1 baguette, thinly sliced and toasted

Preparation

Step 1

Preheat oven to 325°. Heat oil in a medium saucepan over medium-low heat. Add onion, and cook, stirring often, until translucent and fragrant, about 3 minutes. Add the strawberries, and cook until the berries are tender and soft, 4 to 6 minutes. Add the wine, honey and Sriracha; cook, stirring often, until thickened, 8 to 10 minutes.

2. Place the cheese on a parchment paper lined baking sheet, and bake in preheated oven until warm, 3 to 5 minutes.



3. Place the warm cheese round on a serving platter; top with the warm strawberry sauce. Sprinkle with the chives and salt, and serve with the toasted baguette slices.


Tip! Grill your cheese instead: Coat grill rack and one side of cheese with olive oil. Over a low flame, grill the cheese, coated side down, for 5 minutes or until the rind is soft.
