Ingredients
- 10 c zucchini, peeled and shredded
- 4 onions, chopped
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1/4 c pickling salt
- 1 T pickling salt
- 2 T dry mustard
- 1 T garlic powder
- 1 T cumin (too much)
- 2 c white vinegar
- 1 c brown sugar (WAY too much)
- 2 T crushed red pepper flakes
- 1 t nutmeg
- 1 t black pepper
- 5 c chopped ripe tomatoes
- 2 T cornstarch
- 2 cans tomato paste

Preparation
Step 1
Combine zucchini, onions, bell pepper, and salt. Mix and cover and leet stand over night.
Next day rinse, drain will and put into a large pot then add mustard, garlic, cumin, vinegar, brown sugar, pepper flakes, cornstarch, nutme, pepper, tomatoes and paste.
Bring to a boil and simmer fore 15 min.
Pour into sterilized jars and seal.
Water bath 10 min.
