Ingredients
- SAUCE:
- 5 to 7 pound rib roast, boneless
- 1 cup butter
- 7 cloves garlic, chopped
- 2 tablespoons Rosemary
- 2 tablespoons thyme
- 2 tablespoons salt
- 1 tablespoon pepper
- Drippings from roast
- 2 tablespoons flour
- 2 cups beef broth

Step 1
Preheat oven to 500°F.
Mix all ingredients and form a paste. Rub mixture liberally all over the meat.
Bake in 500°F oven, 5 minutes per pound, turn off over for 2 hours DO NOT OPEN OVEN for medium rare.
Pour dripping into a sauce pan and add flour and beef stock stir over low heat. Strain into a gravy boat and serve.
