Ingredients
- 2 lg frozen pie shells
- 2 lbs. ementaler, gruyere and or jarlsburg shredded cheese
- 4 large eggs
- 1 medium cooked potato, grated
- 2 T. flour
- 2 1/2 c. milk (can use cream for part)
- 1 T. salt

Preparation
Step 1
Make a paste with flour, salt and 1/2 c. milk. Add the rest of the milk and eggs and beat well. Add the cheese and potatoes and mix well. Pour into the unbaked pie shells. Place pies on cookie sheet in case of spills. Bake at 400 degrees for 25 minutes and turn down to 350 degrees and cook for 35 more minutes.
