Ingredients

  • Pie crusts
  • 2 pts of blueberries
  • 1/4 cup of flour
  • 3/4 cup of sugar
  • 1/2 lemon (or 1 Tbs. of lemon juice)
  • butter
  • 1 egg, beaten

Step 1

Roll out two pie crusts, room temperature. Place one crust in pie pan. In a bowl, toss blueberries in 1/4 cup of flour. Place blueberries in crust. Sprinkle with sugar and lemon juice. Place dabs of butter on top of ingredients. Place second pie crust and crimp edges. Make 4 slits in top of pie. Spread some beaten egg on top of crust.

Place in oven and cook at 375 for 40 minutes. Place foil over edges for first 20 minutes.

You can use any fruit for this pie. Peaches, apples (add apple pie spice), mixed berries, etc. Can be made with frozen fruit.
