Mrs. Fields Peanut Butter Dream Bars*

In 1987 the Mrs. Fields Corporation devised a rather clever treat called the Peanut Butter Dream bar—a delicious combination of peanut butter, chocolate, and a cookie-crumb crust. It was not only a tasty product but an economical one. Mrs. Fields has always had the policy of removing cookies that are more than two hours old from outlet display cases. Now, instead of being thrown away, the cookies are crumbled up and mixed with melted butter to form the Dream Bar crust.

Ingredients

  • 8 Mrs. Fields Chocolate Chip Cookies
  • 5 tablespoons melted butter
  • 3/4 cup peanut butter
  • 1 1/2 cups powdered sugar
  • One 12-ounce bag milk chocolate chips

Preparation

Step 1

Preheat the oven to 350 degrees F.

2. Crumble the cookies into a medium mixing bowl.

3. Add the melted butter; stir until the mixture darkens and the butter is evenly mixed in.

4. Pour the mixture into an ungreased 9x9-inch baking pan.

5. Press the dough down solidly into the pan and bake for 10 minutes, or until it's firm around edges. When done, cool on your stovetop for 15 minutes, then pop the pan into the refrigerator for an hour.

6. Mix the peanut butter and sugar until blended. The mixture should have a doughy texture that allows you to knead it with your hands.

7. Melt the chocolate chips in a double boiler over low heat, stirring often. You may also melt them in a microwave oven set on high for 2 minutes, stirring halfway through the heating time.

8. When the dough is cool, spread half of the melted chocolate over the surface.

9. Cool in the refrigerator for 20 to 30 minutes, or until it is hardened.

10. Spread the peanut butter mixture evenly over the surface of the chocolate.

11. Spread the remaining chocolate over the peanut butter, covering it to the edges of the pan.

12. Cool the finished product in the refrigerator or let it sit at room temperature until hardened.

13. Slice into five even rows and then once down the middle.

Makes 10 bars.
