  • 1 cup flour
  • 1 1/4 cups salted, honey roasted peanuts
  • 1 1/2 cups sugar
  • 1 1/4 cups creamy peanut butter
  • 1/2 cups unsalted butter, softened but still cool
  • 2 teaspoons vanilla
  • 3/4 teaspoons kosher salt (1/2 as much if using table
  • salt)
  • 3/4 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1 cold egg, beaten
  • 3 tablespoons whole milk

Step 1

Preheat oven to 350°F with the oven rack in the middle. Sift flour into food processor. Add peanuts and process until finely chopped, about 1 minute.

Combine next 7 ingredients and beat on low until it is combined and moistened. Increase speed to medium and beat until soft and light about 3 minutes. With mixer running, add half of the beaten egg, beating until well incorporated. Repeat with remaining egg. Reduce speed to low and add peanut-flour mixture, beating until blended. Add milk and. Eat until a very soft dough forms.
Spoon dough into 36 portions and place 2-inches apart on baking sheets. Bake until edges are firm and just barely beginning to brown and centers are still puffed, 12 to 15 minutes. Cool on baking sheets on wire rack about 10 minutes.

You can add 2 cups sweetened shredded coconut and 1 cup finely chopped white chocolate; 1 1/3 Reese's pieces; or 1 cup dried cherries into the dough if desired.
