Salmon Cakes with Basil and Lime Mayo

  • 14 ounces canned Alaska salmon
  • 3 scallions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon red curry paste
  • 1/4 cup fish sauce
  • 4 tablespoons cornstarch
  • black pepper
  • white pepper
  • 1 egg
  • 1 teaspoon sugar
  • 1/4 cup fat-free mayonnaise
  • 1 teaspoon turmeric
  • 1 teaspoon basil
  • 1/4 teaspoon cayenne
  • pepper
  • lime juice

Preparation

Step 1

1. Mix salmon-sugar. Pan fry in cooking spray.

2. Mix mayo-lime juice. Serve with cakes.

If doubling recipe, keep curry paste and fish sauce about the same!
