Ingredients

  • Cobbler topping:
  • 8 fresh peaches, peeled & pitted and sliced into thin wedges
  • 1 \2 c sugar
  • 1 \4 cup brown sugar
  • 1 \4 tsp. cinnamon
  • 1 \8 tsp. nutmeg
  • 1 tsp. !emon juice
  • 2 tsps. cornstarch
  • 2 cups flour
  • 1 \2 cup sugar
  • 1 \2 cup brown sugar
  • 2 tsps. baking powder
  • 1 tsp. salt
  • 12 tbsps. butter
  • Chilled and cut into small pieces
  • 1 \2 cup boiling water

Preparation

Step 1

Preheat oven to 400 degrees, combine peaches, 1\4 cup sugar, 1/4 cup brown sugar,cornstarch
cinnamon, nutmeg, lemon juice & cornstarch
Toss to coat evenly & pour into 2 at. baking dish. Bake for 10 minutes
Meanwhile prepare topping: in lg. bowl combined e flour, sugars, baking powder & salt
Blend in butter with your finger tips or a pastry blender, until mixture resembles coarse meal. Stirin water until just combined remove peaches from oven, drop spoonfuls of topping over peaches
Sprinkle entire cobbler with sugar. Set your baking dish on a baking sheet ( this is in case cobbler boils over)
Bake until topping is golden brown, about 30 minites
