Ingredients
- Quiche:
- 1 pie crust (store bought)
- 5 lg. eggs
- 3 \4 c heavy cream
- Approx. 1\2 c milk
- 1 \4 tsp. salt
- 6 oz Canadian bacon diced
- Blender Hollandaise Sauce:
- 1 \2 c butter
- 3 lg. egg yolks
- 1 tbsp. lemon juice
- 1 \4 tsp. salt
Preparation
Step 1
Preheat oven to 350 degrees, roll pie crust ljt and fit into 9 inch dish
Line the inside with parchment paper & fill with pie weights or beans make sure they are against the sides of the pie crust
Bake crust for 20 minutes
Remove the weights and then bake for 10 minutes
Remove from oven & allow to cool
The crust will be golden
Prepare the egg mixture by adding the eggs to a lg. measuring cup, them add heavy cream, then add milk the total measurement of the eggs, cream & milk should come to 2 & 1\2 c
Mix with a hand mixer to ensure the egg & cream is light & frothy
Spread the diced Canadian bacon on the bottom of the pie crust, pour egg mixture on top. Bake for 45-50 minutes, the quiche will be slightly wobbly in just the center
Allow to cool for 20 minutes to room temp.
Can be served hot or cold
Blender Hollandaise:
Add butter to a small saucepan & heat over low to medium heat
While the butter is melting add the egg yolks, lemon juice & salt
Once the butter is just melted & starting to foam up remove from heat
Blend the egg mixture in the blender for about 10-15 seconds then start to drizzle the hot butter into the blender while blending, be careful
Once the hot butter is all added to blender continue to blemd for addl. 10-15 seconds, you will have a thick sauce, if to thick you van thin with a small amount of water
Use sauce immedeiately
