Smoked Mackerel & Caramelized Onion Dip

Ingredients

  • 1 tbsp olive oil
  • 2 red onions, halved and thinly sliced then cut into quarters
  • 2 cups sour cream
  • 3/4 cup smoked mackerel, flaked
  • 1 tbsp finely chopped chives
  • 1 tbsp finely chopped parsley
  • 1/2 tsp smoked paprika
  • seat salt & ground pepper to taste
  • 3 finely chopped chives, garnish
  • good quality kettle chips

Preparation

Step 1

In a medium skillet over medium heat, combine the oil and onions. Cook, stirring occasionally into the onions are caramelized, about 20 minutes. Remove pan form hat and let onions cool to room temperature.

In a medium bowl, combine the sour cream, flaked smoke mackerel, chives, partly and smoked paprika. Roughly chop the cooked onions and then combine the sour cream mixture. Season to taste with salt and pepper, Cover and refrigerate at least two hours before serving.

Place in your favourite serving bowl. Garnish with chopped chives and kettle chips.
