cup dried sweetened cranberries
cup coarsely chopped pistachios
(12 ounce) packages white chocolate morsels
Line a baking sheet with foil or parchment paper. In a small bowl, combine the cranberries and pistachios. Pour water to a depth of 1 inch into bottom of a double boiler over medium heat; bring to a boil. Reduce heat, and simmer; place chocolate morsels in top of double boiler over simmering water. Cook, stirring occasionally, for 5 to 6 minutes or until melted. Remove from heat and let stand to cool for 10 minutes. Remove from the heat and stir in half of the cranberry mixture. Spread the mixture evenly over the prepared baking sheet. Sprinkle the remaining half of cranberry mixture over the chocolate. Using a spatula, gently press into chocolate. Refrigerate for 30 minutes or until set. Cut into desired amount of squares or break into uneven pieces.
