Boursin and Bacon Scalloped Potatoes
Very quickly goes together. Wonderful flavor. Cut the recipe in half for an 8x8 dish. Serves four.
Ingredients
- 1 package garlic and fine herbs cheese, Boursin or Alouette
- 3 cups heavy whipping cream
- 1 package real crumbled bacon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 (20 ounce) bags refrigerated home-style sliced potatoes, Simply Potatoes

Step 1
1. Preheat oven to 425. Spray a shallow 1 1/2 quart baking dish with cooking spray.
2. In a small saucepan, heat cheese and cream over low heat for 1 - 2 minutes, or just until cheese is melted. Stir in bacon, salt, and pepper.
3. In prepared dish, evenly layer the potatoes. Pour the cream mixture over the top. Cover with foil and place on a jelly-roll pan.
4. Bake for 20 minutes. Uncover, and bake for 25 to 30 minutes longer, or until the potatoes are tender and the top is lightly browned. Let stand for 10 minutes before serving. Garnish with fresh thyme if desired.
