  • 1 pound fresh green beans and/or wax beans
  • 1 tablespoon thinly sliced shallot
  • 2 cloves garlic, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil



Step 1

Remove stems and strings from beans. Fold a 36x18-inch piece of heavy foil in half to make an 18-inch square. Place beans, shallot, and garlic in the center of foil. Sprinkle with salt and pepper; drizzle with oil. Bring up two opposite edges of foil; seal with a double fold. Fold the remaining ends to completely enclose beans, leaving space for steam to build. (To serve today, omit Step 2. Continue as directed in Step 3.)
Chill bean packet for up to 24 hours.
For a charcoal or gas grill, place packet on the rack of a covered grill directly over medium heat. Grill for 25 to 30 minutes or until beans are tender, turning packet occasionally.
