Ingredients

  • 1/3

    cup sugar

  • 1/4

    cup butter

  • 1/4

    cup orange juice

  • 1

    tblsp lemon juice

  • Large egg, beaten

  • Egg yolk

  • 2

    tsp grated orange zest

  • 1/2

    cup whipping cream

  • 1

    tblsp orange liqueur

  • 18

    chocolate wafers

  • Cocoa powder, sifted if lumpy

Directions

Combine sugar, butter, juices, egg and yolk in a saucepan. Cook and stir on medium until thickened enough to coat the back of a spoon. Do not boil. Let stand until cool. Place plastic wrap directly on surface to prevent skin from forming. Chill for about 2 hours until cold. Beat cream and liqueur until soft peaks form. Fold into orange mixture. Place 8 wafers on a waxed paper-lined baking sheet. Spoon half of orange mixture over wafers. Top with wafers. Spoon remaining orange mixture over second layer of wafers. Break remaining two wafers into quarters and place 1 piece over each sandwich. Freeze for one hour. Just before serving, dust with cocoa powder.
