Ingredients
- 1 lb. thin spaghetti
- 2 tbsp. salt
- 2 cucumbers, quartered and sliced
- 1 red pepper, seeded and chopped
- 1 \2 red onion, thinly sliced
- 10 oz cherry tomsmtoes, halved
- 1 \2 c parm. cheese
- 1 c olive oil
- 1 \2 c red wine vinegar
- 2 tbsp. Italian seasoning
- 2 tbsp. sugar
- 1 clove garlic
- 1 tsp. each salt and peooer
Preparation
Step 1
Cook the spaghetti, drain rinse and cool
Add spaghetti with cucumbers, red proper, red onion, cherry tomatoes and parm. cheese
Combine olive oil, red wine vinegar, Italian seasoning, sugar, garlic clove.
Toss to coat
Add more parm. cheese
Chill for 30 minutes
