Ingredients

  • 2 teaspoons canola oil
  • 1 diced onion
  • 1 sliced carrot
  • 2 (15 oz) cans drained black beans
  • 1 (28 oz) can diced tomatoes
  • 1 1/2 cups vegetable broth
  • 1 cup sliced roasted red pepper
  • 1 tablespoon minced canned chipotle peppers in adobo sauce
  • 1 teaspoon cumin
  • salt
  • pepper
  • zest of one orange
  • 1 tablespoon thyme
  • diced avocado

Preparation

Step 1

Heat the canola oil in a pot, add onion and carrot and cook for 5 minutes. add black beans, tomatoes, vegetable broth, red pepper, chipotle peppers and cumin. Season to taste with salt and pepper. Simmer for 20 minutes Stir in zest of one orange and thyme. Serve with diced avocado on top.
